This might not count? But, in terms of slower paced - the slowest I play on Steamdeck is Skyrim.
Technically an action game but the combat is easy and not very reliant on reaction speed. Most of your time is just exploration and questing

I really think the etched screen is a modicum of difference. If you like the look of the special edition, that will make a much bigger deal to you than diff the etched screen makes
If they’re committed then so am I. Whenever Sony starts bringing the few fromsoft games it’s holding hostage, I’ll be down to a steamdeck and a switch
I have it on full screen for one and then map a button to swap between the two.
Works in most games that don’t need you to be constantly viewing both

You could try a hotspot from the phone to get it to start transferring between them
Lately I’ve been either just emulating on my steam deck or playing pretty select, not exactly new, triple A’s.
Newest I really have installed is Armored Core 6 and Starfield. Though starfield has sat pretty untouched do to it’s state on deck
