I’ll drive for an hour and the engine temp stays on cold. Then out of nowhere shoots up to passed the end of hot. One day I’m driving and I can put the heat on and it’s nice and toasty. The next day, nothing but cold air comes out of every setting, even after warming up and then driving.
Water pump (Which you already fixed), thermostat, Plugged coolant channel. Plug could be anywhere, unfortunately, but with your symptoms I’d actually check the heater core. Especially if someone put some radiator Stop-Leak or whatever in there.

If an explanation video looks a bit out of your league, or your vehicle happens to be extremely rusted, I’d take it to a professional just to avoid the chance of being left dead in the water.
You should be fine waiting a week, but for the most part if something has a left and a right side, you should be replacing both at the same time- if one goes, the other is closing on the end of its lifespan.
The only exceptions I can think of are rims, rotors and axles.
Could be with the jack, could be in the glove box, could be in the doors, could be hiding with the spare… Every time I’ve had to look for one of those they’re in a different spot.
Assuming you’re completely out of luck and your key is completely gone, any mechanic (Maybe not a tire shop) should have a box of turbo sockets that’ll take those right off.
Is the driver side hot as well?
Did you recently use the brakes? Because they tend to do that.
