If your dead set on Unifi go nuts. But at least check out Omada.
Don’t be making expensive descions on a complete network stack just because it looks pretty.

It COULD work but the final results would depend on your MoBo and the drivers playing nicely.
Ethernet is definitely the way to go if you can. If not a pair of outdoor bridges will get you connected albeit much slower.
TP link Omada stuff is great. It’s like unifi but cheaper and minus the tribal fanbois.
A C is perfectly fine considering the speed of your connection. Use the MoCa with a switch upstairs. Connect your pc and the Mini hub to that. You should see a nice improvement with both devices.
Who’s your ISP ?
Look I’m an independent enginner doing remote or on site support. I see all sorts in people’s history etc. Do I care No. Let’s face it everyone pees poos and screws.
Ain’t no shame we’re all the same.
You’ve got 2 options really.
Upgrade the router to 6e but loose the landline (if that’s relevant) but the difference will probably be negligible at best due to antenna losses on the Mobo.
Keep the router and add a pair of 6e WiFi bridges / mesh and ethernet them in at each end. Have a tinker with them on best placement to keep the old man happy.

It cuts down a lot of BS on the phone support lines when you use the correct terms and can have a sensible go at diagnosing the issue.
We dont use the CPE term often in the UK. It’s modem ONT router etc.
