Blender has a video editing space which doesn’t have any AI features built-in by default (add-ons exist made by community).
The software has a substantial learning curve but which video editor doesn’t.I haven’t tested in a while, but:

Keep in mind that “open source” alone does not necessarily imply “no AI features”. There is plenty of open source software that includes some sort of AI integration.

I don’t think they have any AI bollocks. I could also be wrong.
Kdenlive has Whisper for transcription, but it’s at least somewhat useful and optional.
