Stalker anomaly mod works great if you’re comfortable with some tinkering/setup. It’s been a while since I installed it but I recall following a guide from this subreddit and finding it not too difficult to get working. If you want a gritty realistic open world single player fps there’s not much else that tops it imo.
On the other side of the single player fps spectrum, the borderlands games all seem to work well enough.
