I just use file sharing via some USB drives connected to Time Capsules and another internal drive on another time capsule (26TB-ish total) and I don’t have metadata problems.
I’ve been using it for 6+ years now (64GB and 128GB models).

Sounds like you’re talking about Apple TV+ stream and not the Apple TV box.
Apple TV+ is pretty much only the exclusives they make for the service, they release a few at the movie theaters so they can be eligible for some awards, but other than that you’re only option to watch them is Apple TV+.
The neat thing about the service is… If you don’t want to watch the shows and movies on it, you don’t have to subscribe!
Why are you playing 4k movies on a 1080p projector??? Set the Apple TV box to only play 1080p movies.
The Apple TV box supports thousands of apps, including the TV app (which is the single app that you’re asking about).

Less than 10% of my movies have an “Unknown” director.
Generally, it’s present for the same kinds of movies/bundles. Very apparent when I sort by purchase date: Hitchcock bundle, Star Trek Bundle, Aubrey Hepburn movies, Neil Simon Bundle. Not all of them in each of those groups, but a lot (plus a bunch of other randoms).
Why can iPhones seamlessly switch between resolutions, framerates, and dynamic ranges, but not Apple TV?

Apple TV - Apple does NOT make the whole device, they make a box that plugs into the TV.
Normally, I’d say set for SDR and set to match.
But I thought, until this post, that all the apps that didn’t support it were only SDR.
In the past I’ve definitely had HBO match for me, but I can’t think of the last thing I watched with the new Max app. I don’t use the other apps you mentioned (YouTube once in a long while).
