The KF CX-5 is fundamentally the same car from MY2017-2024. The measurements haven’t changed.
Go on Yelp/Google/wherever and find a lemon attorney in your area. Provide them your documentation. Let them handle it, free of charge to you.
Have you tried adjusting the brightness settings in the infotainment menu?
Mazdas def have a heavier/stiffer feeling steering rack compared to other cars in the class.
I would recommend the Bose option and not bother with the lesser choices.

Does your CX-5 have heated mirrors? Not all do.
Simple:
Post-purchase, find a local wrap shop and have them wrap the chrome bits gloss black; and, powdercoat the wheels gloss black.
I have no complaints about the quality of the 360° cameras on my 2022 CX-5 Turbo Signature. The newer Mazdas (especially the CX-90) are even better.

Heated/ventilated seats are a must (esp. ventilated function) on any car I now buy. They make all the difference with Los Angeles heat. No more sweaty butt/back. I also love the heated steering wheel, it feels great in the hands when it’s cold or just to soothe them after a long day.
Adaptive headlights are a great feature too, I miss them whenever I drive a car without them. The CX-5 headlights are outstanding but the left/right swiveling makes it even better.
HUD is a nice feature; not absolutely necessary but it’s nice just looking forward out the windshield for my speed, speed limit, blind spot warnings, adaptive cruise distance, etc rather than glancing down.
Bose is a must have if you enjoy music, it’s definitely a great system in a new car, all things considered, south of luxury brands.
You mentioned passing on the turbo, but traffic jam assist is a godsend if you have a crappy commute to/from work. It’s semi-autonomous driving under 40mph (you need to let the car know you’re there by steering a little every now and again) but it has made my 12mi/sometime 1hr commute much better and less stressful.
The parking sensors and 360° camera on the Signature are very nice to have, but likely not what you want to spend.
Also, FWIW (imo), the 2.5T is a gem of the engine and feels like the proper amount of power for the weight and size of the CX-5.
There is no per-tire pressure display in the car, nor does this functionality exist in the MyMazda app. The car will inform you when tire pressure is low; however, you must check the pressure yourself manually.

Nope. Not in the cards, according to my dealership techs. Just buy a wireless USB adapter.
It’s probably one of the most reliable turbo 4 poppers out there.
MY21 had oil consumption issues; but otherwise it’s pretty much a solid and issue-free engine. Turbo engines are mechanically more complicated and require slightly more maintenance than their NA equivalents but I haven’t heard of any 2.5T just grenade themselves.
SkyActiv is generally considered to be a dependable range of engines/transmissions. Change the oil every 5,000mi and you’ll be good.
