Best to test it and verify that it does so with other known 1gbps connections. If it always is 100mbps , then reterminate and test again. Most likely one of the wires didn’t connect the you are only using 2 of the 4 pairs.
Seems quite all right for what you are setting up.
The only question I have is whey cat 5 cable when cat 6 is so much better? May not make much difference now, but in the future higher throughput might become an issue.
As far as whether to set up load balancing or fail over is something you can play with until you find that it operates the way you like it.

Best setup for APs or mesh satellite units is when they are connected via wired ethernet cables to their location. If you don’t have ethernet wiring in your house, perhaps you have coax which would allow you to use MoCA adapters to get wired connectivity. My neighbor got this set for his 3000 sq ft colonial. He has his main one in the basement and only deployed one of the units and he has good coverage all through the house. Recommend setting the 5ghz band to 80mhz channel width from 160mhz to not hog the band and get a little further range.
