Apologies in advance if I'm spamming too much. Do cherry tomatoes (or tomatoes in general) not ripen together all at once? Do some ripen faster than others?

And how do I keep my ripe tomatoes fresh so as to not use them and wait for the others to ripen for a bigger harvest?
