To me the mouth feeling has always been more in focus than taste. Obviously taste is important, but the mouth feel decides if I enjoy something or not.

Now, I find all types of guides, articles etc on taste, but nothing on consistency. Even all ratings or shopping guides I find seem to focus on taste and looks while very few even mention texture.

How can I get a better idea on how to aim for certain textures? How do I combine textures without a everything feeling so random (comparable to just adding a few random spices)? Is there a name to this type of cooking?
