I find it very annoying that iPhone 15s from all around the world have physical sims, the ones in Hong Kong have 2 but in USA they don’t… what is the reason for this? When I’m spending $1400 on a damn phone I want a physical sim tray too as it will be a great help when I’m traveling out the country.

They do. Just not in US.
It was forced on Apple by the big three carriers. It makes it easier for their customers to leave their carriers and move to a new one.
Same reason phones don’t have headphone jacks anymore. Or why laptops don’t have DVD drives and floppy disk drives. Or use FireWire. Physical SIM cards are obsolete and the easiest way to completely erase them from our lives is yanking the cord out in one go.
SIM cards are basically a way to “login” to your carrier. that still being a physical item is kind of crazy in 2024. Even eSIM, while being a huge step up, can be further improved. IMO this process should simply be a login and password like everything else.
Ónly in the US. Apple began this with the 14 line.
