What’s funny is, I can’t eat safely (allergies) at so many of these large scale chain restaurants, but the little shops by me do an incredible job. Not only do they have alternates, use separate cookware, etc, but it’s also just better food.
That doesn’t work for capitalism at scale, where they are eternally chasing profits by minimizing costs over everything else.
Side benefit for me is I get to support local business when I take my kids out. Just did that Friday with a small restaurant and a small batch ice cream shop, where I had a mojito + mint sorbet.

Everytime I watch one of those capitalist BJ shows (e.g. shark’s tank, Gordon Ramsey’s next food star, basically anything on CNBC, etc.), which I do far too often, and they ask the chum in the water whether or not the business can scale I think about how they’re really asking whether or not the product can eventually be made terrible enough to net them a new mega yacht.
Most of them don’t carry avocado anyway. /s

Cracker Barrel can’t keep employees for more than a few weeks. Maybe if they weren’t driven away the customer experience wouldn’t be as bad as it has become. I used to love going to CB but now? It’s the same story as every other restaurant. Understaffed with inexperienced people making minimum wage.
