Title essentially. I used to flash way back in the day, my HTC thunderbolt older phones were flashed so many times. However now, it seems even more difficult.
Are things better with a flashed phone? If I still need google apps for work, does it really make a difference/worth the effort? I haven’t come across a need for root since the old days. What would break, I use Wallet daily for payments, would anything just not work under a flashed phone?
Not to be disparaging, I think it’s be fun, but my phone also needs to be solid and stable, I’d just like to not be constantly spied on.

It’s an OS, not magic.
Pixel with Lineage, DivestOS or Graphene is stable, faster than stock, better battery life.
And each one has ways to run Google apps if you want, DivestOS and Graphene in particular have methods to isolate Google apps to their own profile.
GrapheneOS is super easy to install. You can run your gapps.
As soon as you unlock your bootloader and root, you have to install magisk and random fix-of-the-day to fix Google Wallet/Pay. It’s a pain in the ass, it works for a few days/weeks and it’s a catch game too often, it’s boring, really.
